Bean Burrito Recipe with Corn Tortilla

Ingredients

  • 1 can refried beans
  • 1 package corn tortillas (8 tortillas)
  • 1 cup shredded cheese
  • 1/4 cup diced onion
  • 1/4 cup diced bell peppers
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1 tablespoon olive oil

Instructions

  • Preheat oven to 375 degrees.
  • In a medium bowl, mix together the refried beans, cumin, garlic powder, and chili powder.
  • Heat the olive oil in a skillet over medium heat. Add the onion and bell peppers and cook until softened, about 5 minutes.
  • Add the onion and bell pepper mixture to the bowl with the refried beans and stir to combine.
  • Lay out the corn tortillas on a baking sheet and spread the refried bean mixture over each tortilla.
  • Sprinkle the shredded cheese over the top of each tortilla.
  • Bake for 15-20 minutes, or until the cheese is melted and the tortillas are lightly browned.
  • Remove from oven and serve warm.
