Bean Burrito Recipe with Corn Tortilla
Ingredients

- 1 can refried beans
- 1 package corn tortillas (8 tortillas)
- 1 cup shredded cheese
- 1/4 cup diced onion
- 1/4 cup diced bell peppers
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375 degrees.
- In a medium bowl, mix together the refried beans, cumin, garlic powder, and chili powder.
- Heat the olive oil in a skillet over medium heat. Add the onion and bell peppers and cook until softened, about 5 minutes.
- Add the onion and bell pepper mixture to the bowl with the refried beans and stir to combine.
- Lay out the corn tortillas on a baking sheet and spread the refried bean mixture over each tortilla.
- Sprinkle the shredded cheese over the top of each tortilla.
- Bake for 15-20 minutes, or until the cheese is melted and the tortillas are lightly browned.
- Remove from oven and serve warm.
